Swiss Chard, Roasted Garlic, and Mushroom Pizza

18 whole garlic cloves -- peeled

1 tablespoon olive oil

1 cup firmly packed medium-fine chopped Swiss

chard

1/4 pound mushrooms -- sliced

dash dried red pepper flakes to taste

Quick Pizza Dough (recipe to follow)

Red Rouille (recipe to follow)

1 to 2 ounces feta cheese

 

Preheat oven to 425F.

Place the garlic cloves on a baking sheet and bake for 10 to 12 minutes, or

just until soft and lightly browned. Check often and remove each clove as it's

done.

Heat oil in a large skillet until sizzling. Add Swiss chard, mushrooms, and

red pepper flakes. Cook, uncovered, for a few minutes, stirring often. Lower

heat, cover, and cook for a few minutes just until Swiss chard is tender but

still retains its color. Remove from heat, keep uncovered, and allow to cool.

Prepare Quick Pizza Dough through step 3.

In step 4, spoon Red Rouille evenly over the crust. Arrange Swiss chard

mixture over the sauce. Distribute garlic cloves over the Swiss chard

mixture. Crumble cheese on top. Bake as suggested in Quick Pizza Dough recipe.

Yield: One 12-inch pizza; 2 entree or 4 side-dish servings

NOTES : When chopping Swiss chard, remove the stem and central rib from each

leaf. Retain these for stews, stocks, and other dishes.
