CHOCOLATE MOUSSE PIE

Amount Measure Ingredient -- Preparation Method

1 package semisweet chocolate chips -- (10 oz-12 oz)

1 package tofu -- silken

2 tablespoons maple syrup

1 graham cracker pie crust, 9 inch

 

Blend tofu until smooth. Doesn't take long. Melt chocolate chips in a double

boiler. I don't actually have a double boiler, I used a glass bowl over

boiling water. When the chocolate is melted, stir in the syrup. Pour this

slowly into the blender with the tofu and blend until smooth. Pour into the

graham cracker crust and chill for a few hours. I topped it with fresh fruit

(that I paid an arm and a leg for out-of-season). You don't really even have

to make a pie with this, you could pour it into little cups and it would just

be plain old mousse. I also made little tartlets once and poured it into those

for single-servings.

 

Makes 10 servings.
