Mac's Navy Bean

3 1/4 cups navy beans -- presoaked

8 cups water

2 tablespoons diced green bell pepper

2 cups chopped yellow onion

3 cups diced celery

1/4 cup tamari soy sauce

2 tablespoons nutritional yeast flakes

3 cloves garlic -- pressed or minced

3/4 teaspoon ground caraway seed

1/2 teaspoon ground sage

1 16 ounce can tomatoes -- diced (include juice)

1 cup diced carrot

1 medium leek -- thinly sliced (both white and green parts)

1 cup shredded green cabbage

dash cayenne or black pepper, to taste

1/2 teaspoon additional ground caraway, or to taste

1/4 teaspoon additional ground sage, or to taste

3 tablespoons additional tamari, to taste

 

Soak beans in 6 cups water overnight or for at least 6 hours. Drain and

discard soaking water.

In a 5 or 6-quart pot, bring to a boil: 8 cups water, presoaked beans, green

pepper, onion, celery, tamari, yeast flakes, garlic, caraway, and sage.

Simmer, covered, stirring occasionally, for about 1 hour, or until beans are

quite tender.

Add tomatoes, carrot, leek, and cabbage. Simmer until added vegetables are

tender, aboout 10-15 minutes. Season with pepper,salt, and additional tamari,

caraway, and sage to taste. Serve.
