If so, sorry for the repeat. * Exported from MasterCook * Corn, Potato, and Lima Bean Chowder Recipe By :Bharti Kirchner - The Bold Vegetarian Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 tablespoons olive oil 1 cup finely chopped onion 3 large garlic cloves -- minced 1 pound potatoes (about 4 medium) -- peeled and diced 2 cups vegetable stock or canned broth 3/4 cup bean liquid or water 1 cup home-cooked lima beans, or one 15-ounce can -- drained, cooking or can liquid saved 1 cup whole or low-fat milk 1 medium green bell pepper -- coarsely chopped 1 cup fresh corn kernals or thawed frozen corn 1 tablespoon chopped fresh tarragon or 1 teaspoon dried salt and freshly ground black pepper to taste Heat oil in large stockpot, and saute onion and garlic until onion is translucent. Stir in the potatoes.. Add stock and bean liquid, cover, and bring to a boil. Reduce heat and cook, covered, 10 minutes, or until the potatoes are half-done. Meanwhile, place lima beans and milk in a blender and puree until smooth. Add to the pot. Add the bell pepper, corn (if fresh), and tarragon. Simmer, covered, 6 to 10 minutes, or until the vegetables are tender. If usine thawed frozen corn, add during the last 3 minutes of cooking. Remove from heat. Process 3 cups of this soup in a blender or food processor until smooth. (This will create a textural variation in the soup, part smooth and part coarse.) Return to the pot. Season to taste with salt and pepper. Reheat gently before serving.
