Guest guest Posted January 12, 2000 Report Share Posted January 12, 2000 * Exported from MasterCook * Orange-Basil Tomato Soup Recipe By :The Meatless Gourmet, Bobbie Hinman Serving Size : 4 Preparation Time :0:00 Categories : The Meatless Gourmet Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon vegetable oil 1 cup chopped onion 2 cloves garlic -- crushed 6 medium ripe tomatoes -- peeled & chopped (5 cups) 2 teaspoons dried basil 1 cup orange juice 2 1/2 teaspoons sugar 1/2 teaspoon salt 1/8 teaspoon pepper Heat oil in a medium saucepan over medium heat. Add onion and garlic. Cook, stirring frequently, until onion is tender, about 5 minutes. Add tomatoes and basil. Bring mixture to a boil. Reduce heat to medium-low, cover, and simmer 30 minutes. Place soup in a blender container and blend until smooth Pour soup, a little at a time, through a sieve or strainer, back into saucepan. Press the pulp through the strainer using the back of a spoon. Only the seeds should remain in the strainer, to be discarded. Stir orange juice, sugar, salt, and pepper into the soup. Heat through. Taste soup and add additional sugar or salt, if desired. Serve hot or refrigerate and serve cold.
