It sounds great - 2 favorite tastes, chocolate and coffee! * Exported from MasterCook * Dark Chocolate Tofu Pie Recipe By :Carol Ann Rinzler - The Healing Power of Soy Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- CRUST 3 whole plain graham crackers 1 teaspoon unsalted margarine OR 1 8-inch prepared graham cracker pie crust FILLING 2 pounds silken tofu 1/2 cup sugar 1/4 cup skim milk 2 tablespoons unsalted margarine 1/2 cup unsweetened cocoa 1/4 teaspoon instant coffee or espresso powder 1 teaspoon vanilla Preheat the oven to 350F. Crush the graham crackers, melt the margarine, and combine. Press the crumbs onto the bottom og an 8-inch springform pan, and bake for 10 minutes. Remove from the oven and set aside to cool. Turn the oven down to 325F. While the crust is cooling, drain the tofu and blend it with the other filling ingredients until smooth, using either an electric mixer or food processor. Pour the filling into the pie shell. Bake for 50 minutes or until atoothpick/tester inserted in the center comes out clean. Remove the pie from the oven, chill for several hours, top with whipped cream (optional), and serve.
