Guest guest Posted January 12, 2000 Report Share Posted January 12, 2000 I used canned soybeans. * Exported from MasterCook * Soybean, Carrot, and Potato Stew Recipe By :Carol Ann Rinzler - The Healing Power of Soy Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 whole medium carrots 1 tablespoon canola oil 2 large white onions -- sliced 2 cups precooked dried soybeans 5 cups water 1 teaspoon chili powder 1 tablespoon ancho pepper puree (see below) 1 teaspoon salt (or to taste) 1 large white potato -- sliced thick Put the carrots in a small roasting dish, add oil, and roast for 25 minutes. Add the onion slices and roast for another 15 minutes. Remove from oven, slice the carrots into rounds, and put the carrots, onions, and beans in a stewpot with 5 cups water. Add chili powder, ancho pepper puree, and salt. Simmer for 1 hour, checking from time to time, and add water as needed to prevent the vegetables from sticking or burning. Add the potato and simmer for 1 hour, again adding water as needed. When the carrots and potatoes are tender, serve the dish as soup, a side dish, or a main dish with rice. To make the ancho pepper puree: Split one ancho pepper and remove the seeds. Flatten the pepper in a frying pan and heat it until it smokes, then turn and cook it on the other side. Put the cooked pepper in a bowl, cover it with boiling water, and soak it for 1/2 hour. Pour off the soaking water, and puree the pepper with 1/4 cup of fresh warm water in a food processor,, then rub the puree through a fine strainer and discard the solids. This may be prepared a day or two in advance and refrigerated.
