Mushroom Barley Cauliflower

8 cups water

1 pound sliced mushrooms

2 cups chopped yellow onion

2 cups chopped celery

3/4 cup hulled or pearl barley

4 tablespoons butter

1/4 cup tamari soy sauce

1 tablespoon granulated garlic

4 teaspoons crumbled basil

1 large head cauliflower-3/4 cup diced stem and

core; 3 cups bite-sized flowerettes

2 cups cubed (1/2 " ) russet potato (about 1

medium) -- unpeeled

3/4 cup carrot (about 1 large) -- quartered lengthwise, then

diced

1 10 oz package frozen peas -- rinsed under hot water to thaw

OR

2 cups shelled fresh peas

2 to 3 tablespoons fresh lemon juice, to taste

 

In a 5 or 6-quart pot, bring to a boil: water, mushrooms, onion, celery, barley,

butter, and tamari. Reduce heat; add garlic and basil. Simmer, covered, about

30 minutes, or until barley is slightly tender. Stir occasionally.

To prepare cauliflower, quarter head, then dice stem and core and break

flowerettes into bite-sized pieces.

Add diced cauliflower stem, potato, and carrot. Again bring to a boil, then

reduce heat and continue simmering, covered, until barley and vegetables are

quite tender, about 15 minutes.

Add cauliflowerettes. Simmer 10-15 minutes, or until flowerettes are just

tender.

Reduce to lowest heat. Add peas and lemon juice and heat gently a few minutes,

until peas are bright green. Adjust seasonings to taste, serve.
