Stir-Fried Noodles with Mushrooms and Garlic

8 ounces Oriental whole wheat noodles -- uncooked

SAUCE

1 cup Vegetable Broth

3 tablespoons reduced-sodium (or regular) soy sauce

2 teaspoons cornstarch

MUSHROOMS

2 teaspoons vegetable oil

6 large garlic cloves -- sliced lengthwise into paper-thin

slices

3 cups sliced mushrooms

5 green onions -- cut into 1 " lengths (green and white

parts)

 

Cook noodles according to package directions. Drain.

In a small bowl, combine all sauce ingredients, stirring to dissolve cornstarch.

Set aside.

Heat oil in a large nonstick skillet or wok over medium-high heat. Add garlic.

Cook 10 seconds. Add mushrooms and green onions. Cook, stirring constantly, 2

minutes. Add noodles to skillet. Cook and stir, 1 minute.

Stir sauce mixture and add to akillet. Cook and stir, until sauce has thickened

and noodles are glazed.

Serve right away.
