Enjoy Jenn Ottawa, Ontario, Canada http://tlotc.dhs.org/jenn/ * Exported from MasterCook * WALDORF SALAD 2 Recipe By : Found this on the cancer web page. ---> Kathy Holiday Serving Size : 4 Preparation Time :0:00 Categories : 2 Point Done By Dotties Calculator Fruit Salads & Dressings Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 medium tart apples -- peeled and cored and cut into 1/2 inch cubes 1 tablespoon lemon juice 1 cup seedless grapes -- red or green 2 medium stalk celery -- chopped 2 medium green onions -- finely chopped 2 tablespoons reduced-calorie mayonnaise 2 tablespoons plain lowfat yogurt 2 tablespoons apple juice 1/4 teaspoon celery seeds 1 large bunch watercress -- stems removed 2 tablespoons chopped walnuts In a large bowl toss the apples with the lemon juice. Add grapes, celery and green onion and toss again. In a small bowl combine mayonnaise, yogurt, apple juice and celery seeds and mix well. Spoon over the fruit mixture and toss gently. Wash the watercress, pat dry on paper towels and arrange on four individual salad plates. Mount the fruit mixture on top and sprinkle with walnuts. Makes 4 servings.
