Tofu Kabobs with Peanut Sauce

1 pound firm tofu -- cut into 1 " cubes, drained between towels

2 large garlic cloves -- coarsely chopped

1/2 cup chopped onion

2 tablespoons lime juice

2 tablespoons water

1 tablespoon reduced-sodium (or regular) soy sauce

1 tablespoon firmly packed brown sugar

PEANUT SAUCE

2/3 cup skim milk

1/4 cup very finely chopped onion

1/4 cup creamy-style peanut butter (Choose one

withouy added sugar or fat.)

1 tablespoon reduced-sodium (or regular) soy sauce

1 tablespoon lemon juice

1 teaspoon coconut extract

1/8 teaspoon cayenne pepper

 

Place tofu in a plastic bag and set bag in a large bowl. In a blender

container, combine remaining ingredients, except those for sauce. Blend until

smooth. Pour over tofu in bag. Marinate in the refrigerator 5 to 6 hours or

longer, turning bag over several times. Remove tofu from refrigerator and let

stand at room temperature 30 minutes.

In a small saucepan, combine sauce ingredients. Mix well.

Preheat broiler or grill. Thread tofu onto 4 skewers. Place on a broiler pan

or grill rack that has been oiled lightly or sprayed with a nonstick cooking

spray. Broil until edges of tofu are crisp, turning several times and basting

with marinade.

While tofu is broiling, bring sauce to a boil over medium heat. Spoon sauce

into individual little serving bowls and use for dipping.
