Guest guest Posted January 14, 2000 Report Share Posted January 14, 2000 * Exported from MasterCook * Kahlua Surprise Brownies Recipe By :The Meatless Gourmet, Bobbie Hinman Serving Size : 16 Preparation Time :0:00 Categories : The Meatless Gourmet Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup all-purpose flour 1/2 cup whole wheat flour 1/4 cup cocoa -- (unsweetened) 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/4 cup Kahlua -- (or other coffee-flavored liqueur) 2 tablespoons skim milk 2 tablespoons vegetable oil 2 egg whites 2 teaspoons vanilla extract 2/3 cup sugar 1 cup (packed) finely shredded zucchini -- unpeeled Preheat oven to 350°F. Lightly oil an 8-inch square baking pan or spray with a nonstick cooking spray. In a large bowl, combine both types of flour, cocoa, baking powder, baking soda, and cinnamon. In another bowl, combine Kahlua, milk, oil, egg whites, vanilla, and sugar. Beat with a fork or wire whisk until blended. Add to dry mixture, along with zucchini. Mix until all ingredients are moistened. Spoon into prepared pan. Bake 25 minutes, until a toothpick inserted in the center of the brownies comes out clean. Cool in pan on a wire rack. Cut into squares to serve. Refrigerate leftovers.
