MEDITERRANEAN COUSCOUS

Meatless Dishes Rice And Grains

 

Amount Measure Ingredient -- Preparation Method

1 cup couscous

1 1/2 cups vegetable broth

1 clove garlic -- minced

1/2 teaspoon cumin

1/2 teaspoon oregano

1 teaspoon parsley

2 small tomatoes -- chopped

2 chopped green onions -- including stems,

1/2 cucumber -- chopped

1/2 cup feta cheese -- crumbled

DRESSING

1/3 cup lemon juice

2 tablespoons olive oil

 

Bring the broth to a boil. Reduce the heat and add the garlic, cumin, oregano,

parsley, and couscous. Stir well. Remove the mixture from the heat, cover,

and let stand for 5 minutes. In a small bowl, mix the lemon juice and the olive

oil. Season to taste. Add the vegetables to the broth mixture, top with the

cheese, and sprinkle the dressing on top. This can be served as the main course

with crusty bread to fill out the meal.

 

Makes 4 servings.
