FRIED RICE

Low-Fat Meatless Dishes

Rice And Grains Tofu And Soya Products

 

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

vegetable cooking spray

3 cups cooked brown rice

3 teaspoons vegetarian bouillon -- or chicken bouillon

2/3 cup frozen peas

1/2 cup egg substitute, liquid

1 package firm tofu

(freeze first)* cut into cubes

9 green onions -- diced

3/4 cup fresh spinach -- torn small pieces

1 tablespoon minced Garlic

 

Spray large frypan with oil. Place eggs in and scramble. When eggs are cooked

add garlic, peas, tofu, rice, onions, and spinach. Heat until warmed through.

 

Elaine's Notes: I freeze the tofu packed in water first before using. Be sure to

thaw and press out liquid from tofu. When freezing It changes the texture from

jello to more meatlike.

 

Serves 6
