Not Key Lime Pie

Amount Measure Ingredient -- Preparation Method

1 cup granulated sugar

1/4 cup cornstarch

1 1/4 cups soy milk

3 egg yolks -- slightly beaten

1 teaspoon grated lime rind

1/3 cup fresh lime juice

1/4 cup soy margarine

1 cup sour cream, light

1 graham cracker pie crust, 9 inch

whipped topping -- optional

 

Combine sugar and cornstarch in a medium saucepan. Gradually add milk and stir

with a whip until smooth.

Add egg yolks, lime peel and juice. Stir until smooth. Add butter or

margarine.

 

Cook over medium heat until mixture comes to a boil. Boil for 1 minute. Remove

from heat and cool. Fold in sour cream

 

Pour into graham cracker crust. Chill. Serve with whipped cream if desired.
