Mighty Mushrooms

Amount Measure Ingredient -- Preparation Method

1/2 ounce dried porcini mushrooms

4 tablespoons olive oil

8 ounces button mushrooms -- halved or sliced

4 ounces oyster mushrooms

4 ounces fresh shiitake , or 1 oz dried and soaked

2 garlic cloves -- crushed

2 teaspoons ground coriander

salt and ground black pepper

3 tablespoons fresh parsley -- chopped

 

If you are using porcini mushrooms (and they do give a good rich flavor). soak

them in a little hot water just to cover for 20 minutes.

In a large saucepan, heat the oil and add all the mushrooms, including the

soaked porcinis, if using. Stir well, cover and cook gently for 5 minutes.

Stir in the garlic, coriander, and seasoning. Cook for another 5 minutes until

the mushrooms are tebder and much of the liquor has been reduced.

Mix in the parsley, allow to cool slightly and serve.
