Guest guest Posted January 19, 2000 Report Share Posted January 19, 2000 * Exported from MasterCook * Mighty Mushrooms Recipe By :The Ultimate Vegetarian Cookbook - Roz Denny Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 ounce dried porcini mushrooms 4 tablespoons olive oil 8 ounces button mushrooms -- halved or sliced 4 ounces oyster mushrooms 4 ounces fresh shiitake , or 1 oz dried and soaked 2 garlic cloves -- crushed 2 teaspoons ground coriander salt and ground black pepper 3 tablespoons fresh parsley -- chopped If you are using porcini mushrooms (and they do give a good rich flavor). soak them in a little hot water just to cover for 20 minutes. In a large saucepan, heat the oil and add all the mushrooms, including the soaked porcinis, if using. Stir well, cover and cook gently for 5 minutes. Stir in the garlic, coriander, and seasoning. Cook for another 5 minutes until the mushrooms are tebder and much of the liquor has been reduced.
