Guest guest Posted January 19, 2000 Report Share Posted January 19, 2000 * Exported from MasterCook * Fabulous French Toast Recipe By :The Vegan Gourmet by Susann Geiskopf-Hadler and Mindy Toomay Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces silken tofu 1/2 cup plain or vanilla soy milk 1 tablespoon maple syrup 1/4 teaspoon ground cinnamon 1/8 teaspoon ground nutmeg 2 tablespoons canola oil 12 slices whole-wheat bread This vegan version of French toast doesn't develop a crisp outer layer like the egg batter variety, but its flavor and texture are terrific. Serve with maple syrup and chopped nuts, or an easy to make fruit puree. This breakfast is also delicious with fresh chopped berries. Place the tofu in a blender, along with the soy milk, maple syrup, cinnamon, and nutmeg. Puree, then pour iinto a shallow bowl. Heat 1 teaspoon of the oil in a well-seasoned cast iron skillet over medium high heat. Dip a slice of the bread into the tofu mixture; coat well on both sides. Place in the skillet and cook until browned, then turn, adding a bit more oil as needed. Repeat with the remaining slices. Serve immediately with your favorite topping.
