Guest guest Posted January 19, 2000 Report Share Posted January 19, 2000 * Exported from MasterCook * Stewed Black Beans Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Beans & Rice Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups black beans -- soaked 4 cups water 1 medium onion -- chopped 1 rib celery -- chopped 2 cloves garlic -- minced 1/2 green pepper -- chopped 1/2 cup canned crushed tomatoes 1 tablespoon roasted sesame oil 1 tablespoon miso paste 1 tablespoon lemon juice 1 teaspoon dried oregano 1/2 teaspoon ground cumin 1 dash Tabasco sauce 1 tablespoon rum (optional) salt & pepper to taste 1 tablespoon fresh parsley 1 tablespoon fresh cilantro Bring beans and water to a boil and add all ingredients except tomatoes, rum, lemon juice, parsley, and cilantro. Simmer until beans are soft, about 1 1/2 to 2 hours. Add crushed tomatoes, rum, and lemon juice and cook uncovered for 30 more minutes. Cooking uncovered will reduce the liquid and thicken the mixture. Remove 1 cup of the bean mixture, puree in blender or food processor or mash thoroughly and return to pot.
