Guest guest Posted January 20, 2000 Report Share Posted January 20, 2000 * Exported from MasterCook * Magnificent Zucchini Recipe By :The Ultimate Vegetarian Cookbook - Roz Denny Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups small pasta shells 3 to 4 pounds zucchini 1 onion -- chopped 1 pepper -- seeded and chopped 1 tablespoon fresh ginger root -- chopped 2 garlic cloves -- crushed 3 tablespoons sunflower oil 4 large tomatoes -- skinned and chopped salt and ground black pepper 1/2 cup pine nuts 1 tablespoon fresh basil -- chopped cheese, to serve (optional) -- grated Preheat the oven to 375F. Boil the pasta according to the instructions on he package, slightly overcooking it so that it is just a little soft. Drain thoroughly and set to one side. Cut the zucchini in half lengthwise and scoop out the seeds. These can be discarded. Use a small sharp knife and tablespoon to scoop out the zucchini flesh. Chop the flesh roughly. Gently fry the onion, pepper, ginger, and garlic in the oil for 5 minutes then add the zucchini flesh, tomatoes, and seasoning. Cover and cook for 10-12 minutes until the vegetables are soft. Add to the pan the pasta, pine nuts, and basil, stir well and set aside. Meanwhile, place the zucchini halves in a roasting pan, season lightly and pour a little water around the zucchini, taking care it does not spill inside. Cover with foil and bake for 15 minutes. Remove the foil, discard the water and fill the shells with the vegetable mixture. Re-cover with foil and return to the oven for a further 20-25 minutes. If you wish, serve this dish topped with grated cheese. The zucchini can either be served cut into sections or scooped out of the " shell.
