Guest guest
OK, I'm at a total and complete loss; stumped. I'm about to begin a fibromyalgia treatment regime that mandates a very low carbohydrate diet. Unfortunately, this diet permits no beans, very little fruit, limited veggies (ie, no carrots or squash), and no grains. It allows all meats (except for cold cuts) and most dairy -- neither of which I want to eat. I will eat eggs (which I don't like) if I have to. So, my question is, are there any other vegetarians on a low-carb diet? What do you eat??? -- Ellen C. ellen

Guest guest
Ellen, Last summer I found out I was a Type 2 diabetic. I started a low-carb diet to control my blood sugar and also to help me lose weight. I do not like meat much and so what do I eat? I do eat dairy products and meat analogs (like Morning Star Farms stuff), tofu, nuts, etc. for my proteins. I eat salads, broccoli, cauliflower, green beans for my veggies (and occasionally other veggies in small amounts. I do eat beans because I need the fiber. You just have to see how many carbohydrates you can tolerate. This diet has been very successful for me. My blood sugars are normal every day now and I've lost 45 lbs since July. There are some really good low-carb lists at if you need help. There is also a veggie low carb list called LoCarbVegWeightLoss at onelist. Nancy (in snowy Michigan) " Ellen C. " wrote: > > " Ellen C.
