Enjoy Jenn Ottawa, Ontario, Canada http://tlotc.dhs.org/jenn/ * Exported from MasterCook * LITE CHEDDAR CHEESE SAUCE Recipe By : " Healthy Homestyle Cooking " by Evelyn Tribole Serving Size : 8 Preparation Time :0:00 Categories : 1 Point Done By Dotties Calculator Sauces Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup lowfat cheddar cheese -- (2 ounces) (finely shredded sharp cheddar cheese) 1/4 cup fat-free cheddar cheese -- (1 ounce) shredded 3 teaspoons cornstarch 3/4 cup evaporated skim milk In a small bowl combine the reduced-fat and fat-free cheeses. Sprinkle with 1 teaspoon of the cornstarch and toss until coated. Set the cheese mixture aside. In a small saucepan, use a wire whisk to stir together 2 tablespoons of the milk and the remaining 2 teaspoons of cornstarch until smooth. Then stir in the remaining milk. Cook and stir the milk mixture over medium heat until slightly thickened and bubbly. Cook and stir for 1 minute more. Reduce the heat to low. Then slowly stir in the cheese mixture. Cook and stir until just melted. Makes 1 cup; 8 servings.
