Guest guest Posted January 21, 2000 Report Share Posted January 21, 2000 * Exported from MasterCook * Potato-Garlic Soup (modified) Recipe By :The Garlic for Life Cookbook by Linda Ferrari Serving Size : 10 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 heads garlic -- roasted 3 leeks (white part only) -- thinly sliced vegetable oil spray 8 cups vegetable broth 4 large boiling potatoes -- peeled and chopped 1 cup soy milk salt and pepper to taste 2 teaspoons margarine (optional) Saute leeks in a soup pot sprayed with vegetable oil spray until leeks are soft. Add broth and potatoes and cook about 20 minutes until potatoes are tender. Puree mixture in a blender or food processor. Return to pot and squeeze garlic cloves into soup. Warm on low heat until garlic is completely blended in. Add milk. Salt and pepper to taste and cook 5 more minutes.
