Guest guest Posted January 21, 2000 Report Share Posted January 21, 2000 * Exported from MasterCook * Basil Vegetable Scramble Recipe By : Betty Crocker Easy Meatless Dishes Serving Size : 2 Preparation Time :0:00 Categories : Eggs Quick Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cubed cooked potatoes -- (2 medium) 1 small onion -- chopped (1/4 cup) 1/4 cup chopped red bell pepper 4 eggs 1 tablespoon chopped fresh or 1 teaspoon dried basil 1/4 teaspoon salt 1/8 teaspoon ground red pepper -- (cayenne) 1. Spray 10-inch nonstick skillet with cooking spray. Cook potatoes, onion and bell pepper in skillet over medium heat about 5 minutes, stirring occasionally, until hot. 2. Mix remaining ingredients; pout into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 2 to 4 minutes or until eggs are thickened through-out but still moist. 2 servings.
