CHILI CHEESE CORNBREAD

Amount Measure Ingredient -- Preparation Method

1 cup yellow cornmeal

2/3 cup all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

2 egg whites

1 egg

1/4 cup oil

1 1/2 cups fat-free cheddar cheese -- finely chopped

8 ounces corn, whole kernel, canned -- 1 can drained

4 ounces green chiles -- 1 canchopped/drained

3/4 cup nonfat sour cream

 

Heat oven to 400. Grease 9-square pan. Combine cornmeal, flour, baking powder

and salt in small bowl. Combine sour cream, egg whites, egg and oil in medium

bowl. Stir well. Add cornmeal mixture, cheese, corn and chilies. Mix well.

Pour into pan. Bake for 30 to 35 min. or until toothpick inserted comes out

clean. Cool 10-15 min. Cut into squares. Serve warm

 

Makes 8 servings
