Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 15.5 oz cans black beans (rinsed & drained) -- mashed 1/2 cup chopped tomato 1/2 cup chopped cucumber 1/3 cup sliced ripe olives 1/4 cup chopped green onions 1 tablespoon olive oil 1 teaspoon Greek seasoning 1 4 oz pkg tomato-basil feta cheese -- crumbled Spread beans in a shallow 9-inch dish. Combine tomato and next five ingredients and toss gently. Sprinkle tomato mixture over beans. Top with crumbled feta cheese.
