Sweet and Sour Sauce

2 tablespoons vegetable oil

1 medium onion -- chopped

3 celery stalks -- chopped

2 medium red bell peppers -- chopped

2 garlic cloves -- minced

1/2 cup white wine vinegar

1/2 cup brown sugar -- loosely packed

1 cup ketchup

1 cup canned crushed pineapple

1/4 cup pineapple juice, as needed

 

Heat the oil in a large saucepan over medium-high heat. Add the onion, celery,

and peppers and saute until the onion is translucent, about 5 minutes. Lower

the heat, add the garlic, and saute for 1 more minute.

Add the vinegar, brown sugar, ketchup, and crushed pineapple, stirring well

after each additition.

Simmer the mixture for 30 minutes, adding pineapple juice as needed if sauce

becomes too thick. (Extra sauce keeps in the refrigerator, tightly sealed, for

up to 2 weeks.)
