Broccoli with Soy Mornay Sauce

3 tablespoons soy margarine

1/4 cup unbleached all-purpose flour

2 1/2 cups soy milk -- at room temperature

3/4 cup grated soy jack cheese (about 6 oz)

2 pounds broccoli

 

In a saucepan over medium heat, melt the soy margarine, letting it bubble.

Add the flour gradually, stirring constantly until the mixture reaches a pale

yellow color, about 3 minutes. Slowly stir in the soy milk. Stir constantly

while bringing to a boil, 2 to 3 minutes, and reduce to a simmer.

Add the soy cheese and stir for 3 to 4 minutes as it melts.

Remove from the heat. Reserve 1 cup sauce for the broccoli. (Makes about 3

cups; refrigerate the rest for later use.)

Trim the broccoli, discarding tough ends. Steam until just tender, about 5

minutes, then remove to a warm serving bowl and pour 1 cup of sauce over it.

Serve immediately.
