24 ounces soy cream cheese -- at room temperature

1/2 cup sugar

2 teaspoons vanilla extract

zest of 2 small lemons -- minced

12 Soy Crepes

2 tablespoons soy margarine (optional) -- melted

6 tablespoons strawberry preserves

 

Preheat the oven to 325F. Combine the cream cheese, sugar, vanilla, and lemon

zest in a medium bowl. Stir until smooth.

Fill each crepe with 3 tablespoons filling.

Roll the crepes up and brush with the melted soy margarine. Place them in a

shallow 9 x 13-inch baking dish and heat for 15 minutes or until warm. Place 2

crepes on each plate, along with a tablespoon of preserves.
