Combine the cream cheese, sugar, vanilla, and lemon zest in a medium bowl. Stir until smooth. Fill each crepe with 3 tablespoons filling. Roll the crepes up and brush with the melted soy margarine. Place them in a shallow 9 x 13-inch baking dish and heat for 15 minutes or until warm.
