Guest guest Posted January 26, 2000 Report Share Posted January 26, 2000 I may be mistaken, but I think all the recipes in this book are Vegan. * Exported from MasterCook * Corn in Creamy Bechamel Sauce Recipe By :The Whole Soy Cookbook - Patricia Greenberg Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons soy margarine 1/4 cup unbleached all-purpose flour 2 1/2 cups soy milk -- at room temperature 2 10 oz packages frozen corn In a saucepan over medium heat, melt the soy magarine, letting it bubble. Add the flour gradually, constantly stirring. Cook for about 3 minutes, until the mixture reaches a pale yellow color. Slowly stir in the soy milk. Stir constantly while bringing to a boil, 2 to 3 minutes, and remove from the heat. Reserve 1 cup for the creamed corn and keep warm. (Makes about 2 1/2 cups; refrigerate or freeze the rest for another purpose.) Steam the corn until just tender, about 5 minutes.
