Guest guest Posted January 26, 2000 Report Share Posted January 26, 2000 * Exported from MasterCook * Whole Wheat Banana Soy Muffins Recipe By :The Whole Soy Cookbook - Patricia Greenberg Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups whole wheat pastry flour 1/2 teaspoon salt 1 tablespoon baking powder 2 large very ripe bananas 1/3 cup vegetable oil 1/4 cup honey 1/2 cup soy milk Preheat the oven to 350F and grease a 12-cup muffin tin. Combine the flour, salt, and baking powder in a large mixing bowl. Puree the bananas in a food processor or blender and transfer to medium mixing bowl. Add the oil, honey, and soy milk and mix well. Pour the banana mixture into the dry ingredients and stir just until moistened. Pour the batter into the greased cups and bake for 30 minutes, until lightly brown and firm to the touch.
