Soybean Minestrone

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

1 medium onion -- chopped

2 celery stalks -- chopped

1 medium leek -- chopped, white and green parts

3 garlic cloves -- minced

3 plum tomatoes -- coarsely chopped

8 cups vegetable stock

2 sprigs fresh oregano -- stems removed

1 10 oz package frozen peas

1 14 oz can cooked soybeans

8 ounces small elbow macaroni

salt and pepper to taste

6 fresh basil leaves -- shredded

 

Heat the oil in a large skillet over medium heat and saute the onion, celery,

and leek for 5 minutes, until soft. Add the garlic and saute for 30 seconds

more.

Add the tomatoes, stock, oregano, peas, and soybeans and simmer for 15 minutes.

Add the macaroni, salt, and pepper and continue to cook for 20 minutes, until

macaroni is al dente. Stir in the basil and serve at once.
