The suggested menu was tomato soup and muffins and this ( I think). * Exported from MasterCook * Mediterranean Spinach and Rice Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : ** ELF & MCR ** VegRecipes Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons extra-virgin olive oil 4 garlic cloves -- chopped 1/2 cup golden raisins 2 pounds spinach -- stemmed, washed and spun dry 1 red bell pepper -- cut into slivers Salt and freshly ground black pepper to taste 3 cups cooked rice 5 ozs reduced fat feta cheese -- crumbled (about 1 cup) In a large wok or saute pan, heat oil. Add garlic, and saute 1 to 2 minutes or until barely golden. Add raisins and cook 1 minute. Add spinach and red pepper, sprinkle with salt and pepper to taste and toss just until spinach is wilted. Stir in rice and feta cheese; cook, stirring, until all ingredients are heated through. Serve immediately.
