Here is a muffin recipe that I figured out for Kim from the fth list. The

points are a bit high but I'm sure they taste good and are better for you then

the store bought ones.

Amount Measure Ingredient -- Preparation Method

1 1/2 cups quick-cooking oats

1 cup flour

2 teaspoons baking powder

1/2 teaspoon salt

MIX TOGETHER OIL, WATER, BAKING POWDER

3 tablespoons oil

3 tablespoons water

2 teaspoons baking powder

1 cup packed dark brown sugar

3/4 cup water

1/4 cup oil

1 teaspoon vanilla extract

 

Preheat oven to 400 degrees. Grease muffin tins, or line them with foil or paper

baking cups. Mix oats, flour, baking powder, and salt in a large bowl. Set

aside. Combine oil, water, and baking powder mixture with brown sugar in another

bowl until smooth. Add water, oil, and vanilla extract. Pour over dry

ingredients and mix gently until well blended. Pour batter into muffin cups.

Bake 15 to 20 minutes or until cake tester inserted in middle comes out clean.

Place on wire rack to cool.

 

NOTES: Milk-free, Egg-free, Peanut-free, Soy-free, Nut-free

 

JENN'S LOWER FAT NOTES: You could use unsweetened applesauce instead of the 1/4

cup of oil.
