Guest guest Posted January 27, 2000 Report Share Posted January 27, 2000 * Exported from MasterCook * Soba Noodles with Spicy Tofu Peanut Sauce Recipe By :The Whole Soy Cookbook - Patricia Greenberg Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds soba noodles SPICY TOFU PEANUT SAUCE 6 tablespoons minced cilantro 2 large cucumbers -- peeled, seeded, and sliced into matchsticks 2 bunches chopped scallions -- (about 2 cups), greenn and white parts 12 ounces firm tofu 2 garlic cloves -- minced 1 1-inch piece fresh ginger -- minced 1/2 tablespoon cayenne pepper 1/4 cup soy sauce 2 tablespoons honey 1/2 cup soy milk 1 cup natural chunky peanut butter Have all ingredients, especially peanut butter and honey, at room temperature before preparing recipe. Cook the pasta according to the package directions, drain, and cool to room temperature. Transfer the noodles to a large bowl. Add the cilantro and cucumbers and 5 tablespoons of scallions to the noodles. Toss gently and set aside. In a food processor or blender, whip the tofu until smooth. Add the garlic, ginger, cayenne, and soy sauce and process or blend briefly until combined. In a medium saucepan, over moderate heat, combine the honey, soy milk, and stir constantly until mixed. Remove from heat and add the tofu mixture, beating vigorously with a wire whio. Divide the soba noodles evenly among 6 serving plates.
