Sunday Night Tofu Noodle Casserole

2 cups flat noodles

2 tablespoons vegetable oil

1 14 oz package beef-flavored soy sausage

1/2 small onion -- minced

1/2 small green pepper -- seeded and chopped

2 cups Tomato Sauce (recipe will follow)

1 teaspoon vegetarian Worcestershire sauce

12 ounces firm tofu -- crumbled

6 ounces soy cream cheese

1/3 cup soy sour cream

1 tablespoon chopped chives

1/2 teaspoon salt

 

This casserole resembles a lasagne with its layers of cheese, noodles, and

hearty sauce. It makes a great family supper. I often double this recipe and

freeze one, tightly covered, for future use.

Cook noodles until just al dente and set aside.

Preheat the oven to 350F and lightly grease a 2-quart casserole dish.

Heat the oil in a skillet over medium heat and saute the soy sausage, onion, and

green pepper until sausage is slightly browned, about 5 minutes. Add the tomato

sauce and Worcestershire sauce. Reduce the heat to low and simmer for 5

minutes. Remove from the heat and set aside.

In a medium bowl, thoroughly combine the crumbled tofu, soy cream cheese, soy

sour cream, chives, and salt.

Spread a small amount of soy sausage sauce evenly over the bottom of the

casserole and top with half of the noodles. Cover with the cheese mixture, then

the remaining noodles and soy sausage sauce.

Bake for 50 minutes or until bubbling. Serve hot.
