Guest guest Posted January 27, 2000 Report Share Posted January 27, 2000 * Exported from MasterCook * Tomato Sauce Recipe By :The Whole Soy Cookbook - Patricia Greenberg Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 large onion -- chopped 3 garlic cloves -- minced 1 medium carrot -- chopped 1 celery stalk -- chopped 1 tablespoon Italian seasoning 2 teaspoons dried rosemary 2 teaspoons dried oregano salt and pepper to taste 1 28 oz can tomatoes (or 1 1/2 lbs fresh) -- coarsely chopped Heat the oil in large saucepan over medium-high heat and saute the onion until translucent, about 5 minutes. Add the garlic, carrot, and celery and saute for 3 minutes. Stir in the Italian seasoning, rosemary, oregano, and salt and pepper, cooking 2 to 3 minutes more. Add the tomatoes, reduce the heat to low, cover, and simmer 1 hour. Sauce may be left chunky or pureed in a food processor or blender.
