Soy Meat Loaf

3 14 oz packages beef-flavored soy sausage

2 1/2 cups plain bread crumbs - packaged or homemade

1 large carrot -- chopped

1 medium onion -- chopped

6 garlic cloves -- minced

2 teaspoons dried basil

2 teaspoons dried thyme

2 teaspoons dried oregano

2 teaspoons dried tarragon

1 teaspoon black pepper

1 1/2 cups tomato paste

1 cup Tomato Sauce

 

Preheat the oven to 350F and lightly grease a medium baking pan.

Crumble the soy sausage in a large mixing bowl. Add the bread crumbs, carrot,

onion, garlic, basil, thyme, oregano, tarragon, and pepper, mixing thoroughly.

Stir in the tomato paste thoroughly. Shape the mixture into 2 small loaves and

place in the baking pan.

Bake the loaves for 30 minutes, until loaf browns slightly. Brush the top of

each loaf with the sauce, and bake for 5 more minutes.

Meanwhile, heat the remaining tomato sauce in a separate pan. Remove meat

loaves from the oven, slice, and serve hot. Pass the warmed tomato sauce on the

side
