Guest guest Posted January 29, 2000 Report Share Posted January 29, 2000 * Exported from MasterCook * " Creamy " Fresh Herbed Tofu Dressing Recipe By :Moosewood Restaurant Daily Special Serving Size : 0 Preparation Time :0:10 Categories : Moosewood Restaurant Daily Spe Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 ounces firm silken tofu -- (to 7 ozs) 2 tablespoons cider vinegar 2 tablespoons unsweetened apple juice OR orange juice 1/2 teaspoon Dijon mustard 1 small clove garlic -- minced or pressed 1 tablespoon chopped fresh basil 1 tablespoon chopped fresh dill 1 tablespoon chopped fresh tarragon 5 spinach leaves -- rinsed and large stems removed 1/2 teaspoon salt dash freshly ground black pepper to taste -- (optional) Combine all of the dressing ingredients in a blender or food processor and puree until smooth. You may need to stop once or twice to scrape down the sides of the blender with a rubber spatula. Covered and refrigerated, this dressing will keep for up to 5 days. Variation: For a simpler and slightly milder dressing, omit the tarragon, garlic, and spinach and use a generous, packed tablespoon each of fresh basil and dill. For a tarragon-accented dressing (nice with a French-style meal), replace the dill with an additional tablespoon of fresh tarragon. A small clove of garlic adds quite a pleasant bite, but if you're a garlic lover, try a medium or large clove. If you prefer to use a whole standard cake of tofu, just double the recipe exactly.
