These are not vegetarian but they should be low meat and low fat. They are

ones that I found in looking for cookbooks for a Prostate cancer happy diet.

 

Mediterranean Grains and Greens, by Paula

Wolfert; HarperCollins, 1998

 

Wolfert continues her celebration of the sensuous pleasures of the

Mediterranean kitchen introduced in her earlier books. She focuses here on

delectable grains and greens-based dishes to be found throughout the

Mediterranean, from Spain in the west to Israel, Lebanon, and Syria in the

east, with stops in France, Italy, Turkey, and Greece. While not strictly a

vegetarian cookbook, the recipes include meat, fish, and poultry mostly as

condiments and flavor enhancers rather than the main focus of a meal. There

are careful explanations of the historical and cultural significance of

dishes, and recommendations for ingredient alternatives readily available

outside the Mediterranean.

Steven Raichlen's Healthy Latin Cooking, by

Steven Raichlen; Rodale, 1998

 

Raichlen takes 200 traditional Latin recipes and removes the fat, but not

the fun. From guacamole to Mexican hot chocolate, he blends a thorough

knowledge of Latin America's diverse cuisines with time-tested skill in

healthy cooking. It's a healthy and welcome change from the high-fat

versions of these traditional recipes.
