Karin Baumgardner Issaquah, WA * Exported from MasterCook II * Flaxseed-Apple Battered French Toast w/ Warm Apple Compote Recipe By : The Millennium Cookbook Serving Size : 1 Preparation Time :0:00 Categories : Reg 4 - June '99 - Sent Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- WARM APPLE COMPOTE: 3 apples, peeled, cored -- cut 1/2 inch slices 1 cup apple juice 2 tablespoons maple syrup -- or Sucanet 1 teaspoon orange zest -- minced 1/4 teaspoon ground cloves 1/4 teaspoon ground allspice 1/2 teaspoon ground cinnamon 2 teaspoons fresh ginger root -- minced 1/4 teaspoon ground pepper 1/4 teaspoon sea salt FLAXSEED-APPLE BATTER: 1 tablespoon flaxseeds 1/2 cup applesauce 2 cups soy milk 1/2 teaspoon ground nutmeg 1 teaspoon ground cinnamon 1/4 teaspoon sea salt 8 slices whole-grain bread, stale -- thick slices 1/4 cup oil -- optional WARM APPLE COMPOTE: In a large nonreactive saucepan, combine all the ingredients and bring to a boil. Reduce to a simmer and cook until the liquid reduces to a light syrup, about 15 minutes. Serve warm. Store in an airtight container in the refrigerator for up to 4 days. Makes 2 cups. Per serving: 116 calories (0% from fat), 0 g. protein, 29 g. carbohydrate, 0 g. fat, 0 mg. cholesterol, 137 mg.sodium, 2 g. fiber FLAXSEED-APPLE BATTER: To make the batter: Combine all of the ingredients in a blender and puree until smooth. Place in a large shallow bowl. Dip 2 slices of bread at a time into the batter to coat evenly. In a large saute pan or skillet, cook the bread in the oil over medium heat on both sides until lightly brown. Or, cook the bread in a dry nonstick pan. Repeat with the remianing bread. Serve 2 slices per serving with 1/2 cup of the apple compote. Makes 4 servings. NOTE: " The flaxseeds in the batter give this French toast an eggy quality that's missing in a lot of vegan recipes. Don't skip the compote; it's a perfect complement and easy to make, too.
