Divide herbs between squares of cheesecloth. Gather cheesecloth at top and tie with twine. Soups And Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup chopped onions 4 cloves fresh garlic -- chopped 1 tablespoon olive oil 1/2 cup peeled and cubed butternut squash 1/2 cup diced carrots 1/2 cup peeled and diced parsnips 1 red bell pepper -- chopped 3 medium tomatoes -- cored and diced 1/3 cup minced fresh parsley 2 bay leaves -- crushed and wrapped in cheesecloth 2 teaspoons dried Italian herb seasoning 4 cups defatted stock 1 cup uncooked macaroni Salt and pepper to taste Serves 4 to 6 Chilly weather adds soups and stews to menus, made extra flavorful by bay leaf packets added to the simmering pot. In large Dutch oven over medium-high heat, combine onions, garlic and oil. Cook 5 minutes, stirring frequently to prevent browning. Add squash, carrots, parsnips and bell pepper; cook 5 minutes, stirring frequently. Add tomatoes, parsley, bay leaves and Italian seasoning. Cook 2 minutes. Add stock and macaroni. Bring to boil. Lower heat to medium; cook, stirring occasionally, 25 minutes, or until macaroni is soft and flavors blended. Season to taste.
