Smoked Tempeh and Potato Sausages

Amount Measure Ingredient -- Preparation Method

8 ounces marinated smoked tempeh -- finely crumbled

1 russet potato -- peeled, finely diced into 1/4 "

cubes, boiled until soft,

OR 2 yellow Finn potatoes -- and drained

2 scallions -- (to 3) finely chopped

1/4 cup unbleached flour

OR 2 tbsp. cornstarch

1 teaspoon dried sage

1/2 teaspoon dried thyme

1/4 teaspoon ground nutmeg

1/2 teaspoon ground pepper

2 teaspoons tamari soy sauce

sea salt to taste

2 tablespoons canola oil -- (optional)

 

In a large bowl, combine all the ingredients except the oil and mix well

with your hands. Form the mixture into eight 1/2-inch thick patties.

In a large saute pan or skillet, cook in the oil over medium heat on

both sides until browned or cook in a nonstick pan without oil. Serve

warm.
