The first one is Vegetarian Express by Nava Atlas " easy Tasty and Healthy menus in 28 minutes (or less) " . Each 2 pages is a menu for that day and she lists what your pantry or shopping needs are. She lays out a plan to get everyone done at once, so you can get it done in 28 minutes or less. There are just over 200 pages in this book. She has just a few desserts, but primarily the book is complete meals made quickly. I like her book so much I got her Vegetarian Soups for All Seasons too. The next one is Lorna Sass' Complete Vegetarian Kitchen, Where Good Flavors and Good Health Meet " . I really like this book too; she does a good job explaining more than I already knew about grains and how to serve them with variety, and the recipes are fairly quick.
