***VEGETABLES***

5 cucumbers

4 large jicama

1 bunch parsley

10 cups chopped black olives

30 cups corn

40 onions

2 bunches celery

5 bunches spinach

65 green peppers

OR a mix of 40 green peppers and tomatoes

and onions for coring and steaming

and stuffing and 25 green peppers)

3 bunches green onion

7 garlic bulbs

(approx 35 cloves)

10 cups mushrooms

5 heads cabbage

50 potatoes

2 1/2 cups green chilies

2 #10 cans tomato sauce

(6 lb. 15 oz.)

***DAIRY***

10 cups yogurt or soy yogurt -- (2 1/2 qt.)

***SEEDS***

2 cups sesame seeds

12 1/2 cups cashews

10 cups shelled sunflower seeds

***EGGS***

2 1/2 dozen

***SPICES/CONDIMENTS***

Tamari

15 cups Salsa

Thyme

10 tablespoons Amino Acids

lemon juice

chili powder

***MISCELLANEOUS***

10 pounds tofu and/or tempeh

***BEANS***

15 cups dry beans

(red pinto or white or calico or other

beans

15 cups dry black turtle beans

 

The quantities listed are sufficient to make five of each of the meals,

each of which serves 10. Modify quantities and recipes according to your

family size. Also quantities are deliberately generous so that you will be

able to freeze what is left over for later use.
