Guest guest Posted February 2, 2000 Report Share Posted February 2, 2000 * Exported from MasterCook * Spicy Thai Tofu Recipe By :The Cancer Prevention Cookbook - Richard Bohannon,M.D., Terri Pischoff, and Kathy Pakosh Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup fresh lemon juice 1/4 cup fresh lime juice 1/3 cup chopped fresh cilantro 1/2 cup low-sodium soy sauce 2 tablespoons chopped fresh mint 2 tablespoons peanut butter 1 tablespoon finely minced fresh ginger 1 tablespoon sesame oil 1/2 teaspoon red pepper flakes 3 cloves garlic -- minced 21 ounces firm reduced-fat tofu 12 ounces soba noodles To make the marinade, combine all the ingredients except the tofu and pasta in a food processor or blender and process them well. Cut the tofu into eight pieces. Place the pieces in the marinade, cover the container, and marinate the tofu for 1 hour. Turn the pieces over and marinate them at least 1 hour longer. Cook the pasta according to package directions. Drain it, transfer it to a large bowl, and cover it to keep it warm until the tofu is cooked. Coat a nonstick skillet or griddle with cooking spray and heat it to medium-high. Remove the tofu pieces from the marinade, reserving the liquid. Place the tofu in the skillet and cook the pieces for 2 minutes on each side, or until they're golden brown. Remove the tofu from the skillet and cover the pieces to keep them warm. Pour the marinade into the skillet and bring it to a boil. Pour the warm marinade over the pasta and toss the mixture to combine well.
