Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- ***FOR THE NOODLES*** 3/4 pound linguine 1 1/2 tablespoons soy sauce 2 tablespoons toasted sesame oil 1 tablespoon rice wine vinegar 1 tablespoon honey 1/2 tablespoon toasted white sesame seeds 1 1 inch piece ginger -- chopped 1 scallion -- chopped 1 garlic clove -- halved 1/4 cup peanut butter 1/4 teaspoon hot sauce ***FOR THE GARNISH*** 1/2 pound snow peas -- blanched, chilled, and julienned 1/4 cup chopped scallions 2 teaspoons black sesame seeds Little Meals by Rozanne Gold, (Villard, 1993) Makes 4 servings for a light main course 1. Cook the linguine in a large pot of boiling water until done. Drain, and rinse under cool water. Drain again. Reserve. 2. Place the remaining noodle ingredients in a food processor fitted with the steel blade. Process until very smooth. Add 2 tablespoons of water to dilute; the color will lighten. 3. Mix the noodles with sauce. Divide evenly onto four plates, and garnish with snow peas, 1/4 cup of scallions, and the black sesame seeds. Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds ripe but firm tomatoes 12 ounces angel hair pasta 2 tablespoons olive oil 1/3 cup chopped fresh basil 1/4 cup chopped fresh parsley 2 scallions -- minced 1/3 cup sliced black or green olives Salt and freshly ground pepper -- to taste Serves: 6 This quick and fragrant summer dish will have you eating in no time! Fill a large pot halfway with water and bring to a boil. Plunge the tomatoes in, remove the pot from heat, let stand one minute and drain. When cool enough to handle, slip off the skins, dice the tomatoes and set aside. Cook the pasta according to package directions until al dente, then drain. In a serving bowl, combine the pasta and tomatoes the remaining ingredients. Toss well and serve immediately. VARIATIONS: When tossing the pasta, add a cup of diced fresh mozzarella cheese or mozzarella-style soy cheese.
