Guest guest Posted February 4, 2000 Report Share Posted February 4, 2000 * Exported from MasterCook * Apricot Dressing Recipe By :The Millennium Cookbook Serving Size : 0 Preparation Time :0:00 Categories : The Millennium Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup water 1/3 cup dried apricots 1/2 cup fresh lime juice 3 tablespoons champagne vinegar OR other light vinegar 1/2 serrano chile -- seeded & minced 1 teaspoon fresh ginger 2 tablespoons honey 1/2 teaspoon sea salt In a small saucepan, heat the water to a simmer. Remove from heat and add the apricots. Let set for 15 minutes or until soft. Drain and cool. In a blender, combine the apricots with all the remaining ingredients and blend until smooth. Store in an airtight container in the refrigerator for up to 1 week.
