Bananas Foster Our Style

Amount Measure Ingredient -- Preparation Method

1/2 cup unsalted butter

1/2 cup light brown sugar

1/2 cup coarsely chopped pecans

4 large ripe bananas -- peeled and cut

into diagonal 1.5-inch pieces

3/4 cup Myer's rum

1/4 cup frangelico liqueur

1 quart very good quality vanilla ice cream

 

Melt butter in large saute pan, then add brown sugar and pecans and continue

cooking over medium heat until sugar is melted.

 

Add bananas to butter-sugar mixture and cook about 2 minutes until just tender.

Add rum and liqueur; then, when it bubbles, light with match AND STAND BACK!!!

Shake pan to distribute flaming liquid, spooning it over bananas to coat fruit

well. As soon as flames die, spoon over prepared bowls of ice cream and serve

immediately.

NOTES : This is not the most pure version of Bananas Foster, the wonderfully

rich dessert invented at Commander's Palace in New Orleans in the 50s. They use

banana liqueur and cinnamon as well as the requisite rum, butter and brown

sugar. But I like the idea of a little Frangelico and some pecans just a little

twist, but very tasty.
