Chipotle Paste

Amount Measure Ingredient -- Preparation Method

4 dried chipotle chiles -- stemmed

1/2 cup mild tomato sauce or tomato puree

1/2 cup water

1 tablespoon champagne vinegar

OR another light vinegar

1 1/2 tablespoons Sucanat or sugar

 

In a medium saucepan, combine all the ingredients and bring to a boil.

Cover and simmer for 30 minutes. Remove the cover and simmer for 5

minutes. Remove from heat and let cool to room temperature. In a

blender, puree the mixture until smooth. Store in an airtight container

in the refrigerator for up to 2 weeks.
