Guest guest Posted February 7, 2000 Report Share Posted February 7, 2000 * Exported from MasterCook * Chili with Mushrooms Recipe By :Abbot George Burke - Simply Heavenly Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups coarsely chopped onion 1/2 chopped bell pepper 1 tablespoon corn oil 2 teaspoons minced garlic 1 1/2 cups shredded mushrooms 3/4 teaspoon powdered cumin 1 1/2 teaspoons sea salt 5 cups chopped tomatoes 1/2 cup canned tomato sauce 2 teaspoons coriander 3/4 teaspoon powdered Mexican oregano 1 teaspoon cayenne pepper 4 cups cooked dried kidney beans -- cooking liquid reserved Saute the onion and bell pepper in the oil. When the onion is transparent add the garlic and mushrooms and cook for a little bit longer. Add the rest of the ingredients, except the beans, but include the bean cooking liquid. Simmer together for 45 minutes.
